He controls the delay effect with a pedal board that he had custom made for him. The board has on/off switches for all of his effects. If you want any more info on his set up you can find it on his website.

I wonder how May makes the "echoing effect" on stage? Does he have some sort of switch on the guitar to turn it on? Or what?
